Butter Tart Squares
Description
Sooo great, and anyone who can’t resist a butter tart is going to love how quick these are. Direct from Deanna, easily doubled to a 9 x 13 (just cook until the center is set!) – enjoy!
Ingredients
Bottom
1/2 c. butter, softened
2 T. icing sugar AND 1 1/2 c. flour
Topping
1 1/4 c. packed brown sugar AND 1/4 c. melted butter
2 eggs, lightly beaten AND 1 T. vinegar AND 1 t. vanilla
1 c. raisins AND 1/2 c. unsweetened coconut
Instructions
Preheat the oven to 350 and lightly butter an 8 x 8 cake pan. Line at least one side with parchment so there are overhanging ‘handles’ and butter the parchment.
For the bottom – cream together the butter and icing sugar, stir in the flour then press it all evenly into your prepared pan. Bake this for 5 minutes.
For the topping – whisk together all of the topping ingredients and pour it over the warm bottom. Bake for another 25 to 30 minutes until it’s set (just give the pan a little wiggle to check). Allow the squares to cool completely in the pan before lifting them out and cutting them if you’d like to serve actual squares!
