Dark Chocolate Chunk Cookies

Description

The original name is ‘Half a Pound of Dark Chocolate Chunk Cookies‘ – which is obviously why I printed off the recipe, but then Kyla made them and I got to try one, so I whipped them up straight away…enjoy!


Ingredients

Dark Chocolate Chunk Cookies

2 c. flour

2 t. cornstarch

1 t. baking soda

1/2 t. salt

3/4 c. butter, softened

1 c. packed brown sugar

1/4 c. sugar

1 egg

2 t. vanilla

8 oz./1/2 lb. dark chocolate, chopped – I used Lindt 70%


Instructions

Preheat the oven to 350 and combine the flour, cornstarch, baking soda and salt in a medium bowl.  In a large bowl – I used my electric mixer – beat the butter and both sugars for a couple of minutes until almost fluffy, then beat in the egg and vanilla.

Add the flour mixture and stir until just combined, then fold in the chopped chocolate (and don’t miss any of the bits!).  Drop by small spoonfuls onto a parchment lined cookie sheet and bake for about 10 minutes – I made mine small, so 10 minutes was perfect, cook them longer if making them large but you want the edges to be just starting to brown.  Leave them sit on the baking sheet for a few minutes before transferring them to a rack to cool.
