Creamy Cilantro Lime Dressing

I decided to throw together some last minute cheater fish tacos (bag of coleslaw, baked fish from the freezer), so I took an extra few minutes to try a new dressing and not only did we all love it, but we declared it tasted ‘like Mexico’.  It makes about 2 cups so I also used it on the Everything Green Salad the following day to great applause.  Don’t be alarmed when you taste it on it’s own…it will have a bitter twist…but once it’s on cabbage or chopped greens it really comes together.  I borrowed my choice of ingredients from here and here – enjoy!



Creamy Cilantro Lime Dressing – makes about 2 cups

2 small bunches (about 2 cups) cilantro

1 c. full-fat Greek yogurt

2 cloves of garlic, minced

1/4 c. freshly squeezed lime juice

~1/2 c. olive oil

1 t. + brown sugar

kosher salt AND freshly ground pepper (to taste)


Add the cilantro, yogurt, garlic and lime juice to your food processor or blender and pulse until smooth.  With the motor running on low, slowly stream in the olive oil and blend until it comes together.  Add in the brown sugar, salt and pepper and blend again to combine.

Taste for seasonings and then chill for at least a half hour before you plan on using it to dress a salad – you my need a titch more sugar, salt or pepper after the flavors have had time to blend.
