Creamy Cilantro Lime Dressing

A great idea that’s quick and you can make it your own and do just about anything with it.  Below makes about 2 cups, I’ve tried it on the Everything Green Salad to great applause, but it’s mostly a regular addition to any meal that even remotely relates to Mexican food.  Don’t be alarmed when you taste it on it’s own…it will have a bitter twist…but once it’s on cabbage or chopped greens, or a taco is dipped in it, it really comes together.  I borrowed my choice of ingredients from here and here – enjoy!



Creamy Cilantro Lime Dressing – makes about 2 cups

2 small bunches (about 2 cups) cilantro

1 c. full-fat Greek yogurt

2 cloves of garlic, minced

1/4 c. freshly squeezed lime juice

~1/2 c. olive oil

1 t. + brown sugar

kosher salt AND freshly ground pepper (to taste)


Add the cilantro, yogurt, garlic and lime juice to your food processor or blender and pulse until smooth.  With the motor running on low, slowly stream in the olive oil and blend until it comes together.  Add in the brown sugar, salt and pepper and blend again to combine.

Taste for seasonings and then chill for at least a half hour before you plan on using it to dress a salad – you my need a titch more sugar, salt or pepper after the flavors have had time to blend.  Serve as you wish!
