Coconut Macaroons

Easy, easy.  This is an old recipe that I’ve been using for years – Brock loves these, and I don’t know where it’s from.  The girls love them because we always say, ‘see you soon, macaroon’ – enjoy!


Ingredients

Scale

1/3 c. + 2 T. flour AND a pinch of salt

4 c. unsweetened coconut

1, 300 mL can of condensed milk – this is easier to use if you place the unopened can in a bowl of warm water before you attempt to pour it

1 t. vanilla


Instructions

Mix together the flour, salt and coconut, making sure that the coconut is well coated.  Add the milk and vanilla and carefully work it all together – it will be quite stiff.  Drop in tablespoons onto a cookie sheet covered in parchment and bake for 10 – 12 minutes at 350.

If you want to be even more decadent – dip the cooled cookies in melted chocolate.
