Brown Sugar Cream Cheese Frosting

Joy the Baker – amazing on everything! – it`s like a cross between cream cheese frosting and Penuche (Brown Sugar Frosting) – but never, ever, forget about browned butter cream cheese frosting, when you need to make a tough frosting choice…enjoy!


Ingredients

Brown Sugar Cream Cheese Frosting

1 package (250 g/8 oz) cream cheese, room temperature

1/2 c. butter, softened

1/3 c. packed brown sugar

1 t. molasses

1/8 t. salt

2 c. icing sugar

2 t. vanilla


Instructions

Using your electric mixer, beat the cream cheese until smooth, then scrape down the sides of the bowl, add the butter and beat again for a minute or so until smooth.  Add the brown sugar and molasses and beat for 30 seconds, then turn the mixer to low and add the salt and icing sugar, mix for a bit, then add in the vanilla.  Scrape down the sides of the bowl and beat for another minute or 2 until the icing is fluffy and smooth – it may also lighten in color.  You may wish to add a bit more icing sugar, but you decide – thickly spread over your cake or cupcakes and everyone will feel the love.

    This cream cheese penuche frosting requires no butter melting and cooking…but tastes like real penuche! I used it to frost a pound cake loaded with toasted walnuts. Perfect!
