Oatmeal Coconut Cookies

Description

Another family favorite cookie, Mom discovered it on the back of a bag of oatmeal and we’re very glad she tried it.


Ingredients

Scale

1 c. EACH butter AND sugar

1 egg

1 1/2 c. flour

1/2 t. EACH salt AND baking soda

1 t. baking powder

1 1/2 c. large-flake oats

1 c. coconut


Instructions

Cream together the butter and sugar and then mix in the egg.  Combine the next 4 dry ingredients and add to mixture, mix well and then add the oats and coconut.

Roll into small balls, place on a cookie sheet (covered with parchment paper), press down with a fork and bake at 350 for 10 to 12 minutes.  They are perfectly done if they are just turning brown around the edges when you take them out.

Great cookies, and no chocolately mess when you hand one to a child!
