
Pumpkin Pie Squares

Another great one from Mom – they tasted so much like pumpkin pie that Brock refused to eat them! Enjoy! **I’ve since updated slightly using a very similar recipe from Buns In My Oven – I prefer using soft butter and my mixer to blend the crust versus cold butter and hand cutting it in**
Ingredients
Pumpkin Pie Squares
Crust
1 c. flour
1/2 c. EACH large flake oatmeal AND brown sugar
1/2 c. butter, softened
Preheat the oven to 350 and add all 4 ingredients to the bowl of your electric mixer. Mix on low for a minute or 2 until well combined, then press the mix evenly into an ungreased 9 x 13 cake pan. Bake for 15 minutes.
Filling
1 can (14 oz/398 mL) pumpkin
1 can (354 mL) evaporated milk
2 eggs AND 3/4 c. sugar
1 t. cinnamon AND 1/2 t. ground ginger
1/4 t. EACH ground cloves AND salt
Whisk together all of the topping ingredients in a medium bowl and pour it evenly over the hot crust. Bake for 20 minutes then remove and evenly sprinkle on the topping.
Topping
1 c. chopped pecans AND 1/2 c. brown sugar
Instructions
Combine the topping ingredients and then crumble and sprinkle them over the partially baked filling, then bake for another 15 to 20 minutes until the filling is set. Allow the squares to cool completely before cutting – and they’re very tasty chilled as well.
