Guacamole Stuffed Tomatoes (with Bacon)

Straight from the ‘Winners’ book from the Best of Bridge (though Mom put me onto it, shocking I know), these are super tasty, super pretty little bites – topped with bacon.  I really need to spend more time going through all of my cookbooks…


Ingredients

Scale

Guacamole Stuffed Tomatoes (with Bacon)

20 – or so – good sized cherry tomatoes

1 large, ripe avocado

1 1/2 T. lemon juice

1 T. grated onion

2 cloves of garlic, finely minced

1/2 t. salt

crumbled bacon for garnish


Instructions

Trim the top off of each tomato and use a melon baller to gently scoop out some of each tomato – basically just make room for the guacamole.

Use a mini-processor to make it extra quick for yourself and blend together the avocado, lemon juice, onion, garlic and salt until smooth.  Alternatively you could also put it all in a bowl and mash to combine well using a fork.  Use a small spoon to carefully fill each tomato, fill up your serving dish and garnish with bacon to your heart’s content.  I recommend an assembly line, I trimmed, Brock scooped, I filled, Brock garnished.  They were great – enjoy!
