Raita (Cucumber and Cilantro)

This might be a close cousin, but it’s not Tzatziki!  Found on NYT Cooking, there are many many possible variations, but this is quick, simple, and absolutely delicious alongside any and every Indian-spiced dish you ever choose to make or order in – enjoy!


Ingredients

Scale

1 c. plain yogurt (thick and full fat is tastiest)

~1/2 t. sea salt – more or less to taste

2 T. finely chopped green onion

~1/2 c. peeled, finely dice cucumber – I scraped the seeds out of mine

~1/4 c. chopped fresh cilantro


Instructions

In a medium bowl, stir together the yogurt and salt, then add in the remaining ingredients and mix well.  Taste for seasonings and transfer to a pretty serving dish, though I think leaving it to chill for an hour or so really helps with the flavor – plus, a cool sauce is especially lovely with spicy Indian dishes!
