SunButter Chicken Lettuce Wraps
Description
I have a couple of other similar recipes posted (Butter Lettuce Chicken Cups and Hoisin Pork Lettuce Wraps), but this version has the SunButter sauce, and the sauce is everything. Messy, delicious, finger food that’s tasty at any temperature, I found this ‘reminder’ on Damn Delicious – enjoy!
Ingredients
1 T. EACH vegetable oil AND sesame oil
1 lb. ground chicken
~1/2 c. EACH diced shiitake mushrooms, carrot AND shallot (or green onion)
1 T. EACH minced garlic AND freshly grated ginger
1/4 c. hoisin sauce
2 t. chili garlic sauce AND 1 t. fish sauce
~1/4 c. chopped cilantro
butter lettuce leaves for serving (or romaine, or even corn tortillas) + hot sauce!
SunButter Sauce
3 T. SunButter AND 2 t. brown sugar
1 T. EACH soy sauce AND freshly squeezed lime juice
1 t. EACH chili garlic sauce AND freshly grated ginger
Instructions
Whisk together all of the ingredients for the SunButter sauce, adding a splash of water if it’s too thick and maybe more chili garlic sauce if you prefer more zip, and set aside.
Heat up the 2 oils in a large skillet over medium-high heat and add in the ground chicken, mushrooms, carrot and shallot and cook while continuing to break it all up until the mix starts to brown, at least 5 minutes. Stir in the garlic and ginger and cook for another minute, then pour in the hoisin, chili garlic sauce and fish sauce and mix well. Remove the skillet from the heat and stir in the cilantro.
Scoop the mix onto lettuce leaves, taco-style, and drizzle on or dip the sauce – SO good!
