Baked Feta and Tomato Spaghetti Squash

Super similar to Feta and Tomato (Tik Tok) Pasta, this great idea came from Grilled Cheese Social.  Jazz it up as you wish, make as many as you want, below is an outline for some easy and delicious comfort food – enjoy!


Ingredients

1 spaghetti squash works for 2 people in our house and **hot tip** – wash and dry the squash, stab the squash a few times with a paring knife lengthwise along the line that you’re going to cut it in half, microwave it for 3 minutes, leave it to cool long enough to handle it, THEN cut it in half. So much easier, (and much less dangerous!).

~1/2 c. feta for each squash half – the block is nice but not necessary

olive oil, salt and pepper

minced garlic

a handful of grape or cherry tomatoes for each squash half

basil leaves and/or chopped green onion

balsamic reduction (glaze)

red pepper flakes as you wish


Instructions

Preheat the oven to 400 and set the halved squash on a parchment or foil lined baking sheet.  The order that works for me is to; rub or spray each liberally with olive oil, rub on some minced garlic and sprinkle lightly with salt and freshly ground pepper (and red pepper flakes, if using).  Place the feta block in the center of each, fill with tomatoes and sprinkle on some onion (if using).  Bake for 30 minutes to an hour and 15 minutes or so – this is dependent on both squash size and how long you microwaved each prior to cutting in half – you want the squash very fork tender.

Once they’re all baked to sweet perfection, use an oven mitt to hold each while you scrape and stir the insides – or dish them up and leave each person to figure it out.  Before eating, you might wish for more salt and pepper and/or green onion, balsamic reduction is awesome drizzled over everything and if I have basil then this is when I sprinkle it on.  So, so tasty and there’s no reason you couldn’t microwave your squash early in the day to help make your dinner prep even faster.
