Waverly is extremely allergic to peanuts, but peanut butter cookies used to be one of our favorites…so it was great news to me when, on August 26th, Julie, from Dinner with Julie, visited the NoNuts Golden Peabutter people and the results were very peanut butter-like!  Also, as of February, 2013, I’ve tried Wow Butter, and it also does the trick – 2015 – (our new favorite peanut butter substitute is SunButter).

Peabutter Cookies

1 c. EACH soft butter, sugar AND brown sugar

1 jar (500 mL) Peabutter (or SunButter)

Cream together (I usually use my mixer) and then add;

2 eggs AND 1 t. vanilla

Mix well and add;

2 1/2 c. flour AND 1 t. baking powder

2 t. baking soda AND 1/2 t. salt

Mix well!  Roll into balls (however large you’d like them), press with a fork and bake at 375 for 8 to 10 minutes.

Celebrate!! – but save a couple for your family.
