Green Goodness Salad

Description

This is a perfect set up for a chicken salad, which is what the original recipe from, America’s Test Kitchen – The Chicken Bible’, intended.  But we had leftover barbecue, and it was such a lovely new idea that I went with it.  Choose your own protein, and prep your components as you wish – all the signs of a fantastic salad – enjoy!


Ingredients

This is an outline – make as much or as little as you wish!

broccoli cut into bite-sized florets – parboil, roast or quickly saute’ in  a bit of oil, garlic and salt and pepper

fresh spinach – we use a whole family-sized package for the 4 of us, dressed spinach reduces quite a bit

edamame – these can be raw (but thawed), or boiled for a couple of minutes in salted water

avocado slices – we usually enjoy a half of an avocado each

Dressing suggestionsGreen Goddess – OR – Cilantro Lime Sauce

Choose your protein – this is a perfect salad to use shredded rotisserie chicken and save yourself some time!

for garnish – roasted and salted pistachios, shelled and chopped

Sriracha for drizzling – because it’s great on everything


Instructions

Prep all of the ingredients that you wish to use and have them ready for assembly.  In a large, separate bowl, dress the spinach and have this be the first layer or component to your salad – I honestly found this easiest to do with my hands.

Add all of your other chosen ingredients and then garnish liberally with pistachios and drizzle with some hot sauce – enjoy!
