Bourbon Peach Smash

I also thought that ‘ginger’ needed to be included, but I was vetoed due to name length.  This ‘summer house special’ is made using peach shrub, and it only takes a few days to set.  For this beauty we highly recommend that you do not strain the fruit out of the shrub – the zingy bite of peach goodness at the end is a terrific finish! and for the kids, simply omit the alcohol – enjoy!


Ingredients

Scale

mint leaves for muddling and garnish

1 1/2 oz. peach shrub – unstrained

2 oz. bourbon

ginger beer to top it off (we love The Great Jamaican Old Tyme Ginger Beer)


Instructions

Add a tablespoon of peach fruit from the shrub to a rocks glass along with the mint leaves, muddle, add a few ice cubes and set aside.  Add the strained peach shrub and bourbon to a shaker, fill with ice, shake and strain into the rocks glass.  Top with ginger beer and garnish with a mint sprig.
