Oatmeal Date Cookies

For sure these could be breakfast!  Another goodie from Fine Cooking!


Ingredients

Scale

1/2 c. butter, softened

1 c. packed brown sugar AND 1/4 c. sugar

2 eggs AND 1 t. vanilla

1 1/4 c. flour AND 1 t. baking soda

1/2 t. EACH salt AND cardamom

3 c. large flake oats AND 1 1/2 c. chopped Medjool dates


Instructions

Preheat the oven to 350 and measure out all of your ingredients, combining the flour, baking soda, salt and cardamom together separately in a small bowl.  Using your electric mixer, beat together the butter and both sugars for a couple of minutes until light and fluffy, add in the eggs and vanilla and beat again, then on low speed, add in the 4 dry ingredients and stir to combine well.

Remove the bowl from the mixer and use a sturdy spatula to fold in the oats and dates.  Drop rounded tablespoons of dough onto a parchment lined baking sheet and bake for 8 to 10 minutes until lightly golden.  Leave the cookies on the baking sheet for about 5 minutes before transferring them to a rack to cool completely.
