Chocolate Tahini Blender Muffins

From all of my tahini research…Soom is supposed to be the most marvelous there is, but of course, we can’t get it in Canada. I encourage you to have a look at their site – lots of great recipes! – enjoy!


Ingredients

Chocolate Tahini Blender Muffins

Preheat the oven to 400 and spray or lightly oil a 12-cup muffin tin.

To your fancy blender, add the following;

2 mashed ripe bananas

2 1/2 c. large flake oatmeal (gluten-free if you wish!)

2 eggs AND 1/2 c. well-stirred tahini

1/3 c. maple syrup AND 2 t. vanilla

1/2 t. cardamom AND 1 t. cinnamon

2 t. baking powder AND 1 t. baking soda AND 1/2 t. kosher salt

Pulse for about 2 minutes – the batter will be thick but smooth and all one color.


Instructions

Stir in a half cup or so of chocolate chips, then evenly scrape/pour the batter into your prepared tin. Sprinkle a couple of extra chocolate chips on top and your children will thank you.

Bake for about 15 minutes until the tops bounce back to a light touch and then allow the muffins to rest in the pan for about 5 minutes before removing them to a rack to cool completely.
