Korean Chicken (with Gochujang Mayo)

I found this wonderful grilling recipe in Diana Henry’s beautiful book, ‘Simple’. And it IS truly simple – an easy marinade, the barbecue, a quick and zippy sauce and then a hundred ways to enjoy it. This would also be one of those recipes that would be delightful to have tucked in the freezer!


Ingredients

Scale

Korean Chicken (with Gochujang Mayo)

1 c. soy sauce

3 or 4 cloves of garlic, crushed

1/4 c. brown sugar

2 t. rice vinegar AND 2 T. sesame oil

~12 skinless, boneless chicken thighs (about 2 lbs.)

Whisk together the 5 marinade ingredients, pour into a large Ziploc bag, add the chicken, give everything a good smooth and then place the bag in a bowl in the fridge for a few hours (or even overnight).

For the Mayonnaise

1/2 c. mayonnaise AND 2 t. gochujang

1/2 clove of garlic, grated AND a good squeeze of lime juice


Instructions

Whisk together all 4 ingredients and taste for seasoning – we like a titch more gochujang and lime juice.

When you’re ready to eat, grill the chicken as you would (discarding the marinade) and serve on rice (or cauliflower) with a zippy coleslaw – every single bite is better with the mayonnaise! And imagine the sandwich these ingredients would make!
