Cottage Cheese Pancakes

Description

Three ingredients!!  I found them here, and they’re officially in the breakfast rotation to stay.  I enlarged the recipe (as below) so that 1 batch will feed the 4 of us exactly – enjoy!

Cottage Cheese Pancakes

11 oz. cottage cheese

6 eggs

1 1/2 T. psyllium husks

butter or coconut oil for cooking

berries, whipped cream, maple syrup or powdered sugar for serving


Instructions

Using a whisk or fork, combine the cottage cheese, eggs and psyllium well in a medium bowl and then allow the ‘batter’ to sit for about 10 minutes – this gives it time to expand.  Fry the pancakes for about 3 minutes per side (we prefer using butter), and I’d highly recommend using a non-stick pan as these can get a little sticky as the cheese melts.  Serve as you would and be prepared to make them often.
