
Red Cabbage, Date and Feta Salad
Description
This is another one of those beauties that you can add to your, ‘chopping/prep’ day, and then have a quick and delicious weeknight salad that is refreshing and interesting to boot! Borrowed from Smitten Kitchen – enjoy!
Ingredients
Red Cabbage, Date and Feta Salad
1 small red cabbage, thinly sliced (a combo of red and green also makes a pretty salad)
3 T. olive oil AND 2 T. freshly squeezed lime juice
salt and red pepper flakes (or Aleppo) – all to taste
1/2 c. EACH pitted, chopped dates AND crumbled feta
1 T. EACH freshly chopped parsley AND toasted sesame seeds (I usually use quite a bit more of both)
Instructions
In a medium bowl, toss together the cabbage, olive oil, lime juice, salt and pepper – all to taste, you want this mix to be well seasoned. Add in the dates and feta, give it another toss and then sprinkle on the parsley and sesame seeds before serving.
