Waldorf Salad

Lynn Crawford whipped these up on the Marilyn Denis show using the chicken from the Slow Cooker Chicken Tacos.  I took her advice and made extra chicken, removing some for the salad before adding the spices and orange juice to the taco mix (though I’m sure any leftover chicken or turkey would do) – making extra is a very easy way to deal with a couple of dinners during a busy week!  We love our salads and this was no exception – enjoy!



Waldorf Salad

3 c. cooked chicken

2 medium crisp red apples, diced

1 to 2 c. seedless grapes, halved

2 to 3 sticks of celery, diced

1/2 to 1 c. chopped walnuts, toasted


1/4 c. EACH mayonnaise AND Greek yogurt

1 t. EACH lemon juice AND Dijon

1 t. honey – maybe a bit more to taste

salt and freshly ground pepper to taste


Whisk together the dressing ingredients in a small bowl and in a large bowl combine all of the salad ingredients.  Add about half of the dressing, carefully fold all together to combine, maybe taste for seasonings and then continue to add dressing until the mix is how you’d like it.  Serve over bowls of chopped crisp lettuce or greens.
