
Lime Sugar Cookies

Borrowed from ‘Pucker’, by Gwendolyn Richards, everyone who had one said it was their new favorite cookie. I doubled it the first time and was so glad I did! I know you’re going to make them straight away – enjoy!
Ingredients
Lime Sugar Cookies
3 1/4 c. flour
1 t. baking soda AND salt
1/2 c. butter, softened
2 c. sugar
2 T. canola oil
zest of 2 large limes
1/4 c. lime juice AND 2 eggs
extra sugar for sprinkling
Instructions
Preheat the oven to 375 and line a couple of baking sheets with parchment. In a large bowl, whisk together the flour, baking soda and salt and set aside, then add the butter, sugar and oil to the bowl of your electric mixer. Beat the butter mix together for a few minutes until it becomes lighter in color and fluffy – scrape down the sides as needed – then add in the lime zest and beat for another minute or 2.
Scrape down the sides of the bowl, add the lime juice and beat on medium speed until all is well blended, then add in the eggs, one at a time, beating well in between and scraping down the sides of the bowl as needed. Carefully add in the flour mix and mix on low until well combined. Using a 1-oz cookie scoop, drop dough balls about 2 inches apart onto your prepared baking sheets, press each down a bit with your fingers and then sprinkle with a touch of sugar. Bake 8 to 10 minutes until the cookies are just barely golden around the edges, then allow them to cool on the pan for a few minutes before transferring to a rack to cool completely.
