
Kale Citrus Salad

Description
I found this on the Pioneer Woman and like everything kale in our lives…this is a favorite that we’ve already made a few times. The photo doesn’t have the jalapeno, but remember to buy one! It makes the salad! The girls don’t actually eat it, but it definitely adds a bit of zip to every bite – enjoy!
Ingredients
Kale Citrus Salad
1 bunch kale, stalks removed and leaves chopped or torn (I’ve used curly, black and baby kale and all were equally tasty)
1 jalapeno, seeded and thinly sliced
3 Clementines, peeled and sliced
1/2+ c. crumbled goat cheese
Dressing
1/4 c. orange juice
2 T. olive oil
1 clove of garlic, minced
1 t. sugar
salt and pepper to taste AND 1 T. sour cream or Greek yogurt
Instructions
To make the dressing, add the orange juice, oil, garlic and sugar to a well sealed container or jar and give it a good shake to combine, then season to taste with salt and pepper. Add the sour cream last and shake until the dressing is well mixed and creamy.
Add the kale, jalapeno and orange slices to a large bowl, drizzle on half the dressing and toss, then add in the goat cheese and as much dressing as is still needed and toss again. If you’re using curly kale, you can dress the salad about 15 minutes before serving, but with black kale (or even baby kale), serve it straight away after tossing with the dressing and dive in!
