Coconut Rice

I looked at a bunch of recipes on the internet…below is what I did, and it worked – coconut rice is a super tasty side to just about anything – enjoy!



Coconut Rice

1 c. jasmine or basmati rice

1 can (400 mL) coconut milk

100 mL water

1/4 t. salt

1 t. sugar

1 T. coconut oil

1/4 to 1/3 c. toasted, flaked coconut (I used sweetened and I toasted it in an ungreased skillet on my stove top for about 2 minutes)


Add everything but the flaked coconut into a medium pot and stir while bringing it all to a boil over medium-high heat.  Once the mix comes to a boil, simmer gently for 10 to 40 minutes (totally different times depending on the rice you use – if you use brown rice you may need more liquid).  Keep a close eye on the pot, once the rice is tender, the ideal situation is for there to still be a bit of liquid – now turn off the heat, put the lid on and let the rice rest and soak up the remaining liquid for 10 minutes.

When you’re ready to serve, fluff it up with a fork and liberally sprinkle either the full bowl of rice or each individual serving with toasted coconut – your children will thank you.
