Zucchini (Cheesy, Quick and Broiled)

This is an easy way that Ma often did zucchini and it’s a super quick side that goes with just about any meal – enjoy!
Ingredients
Zucchini (Cheesy, Quick and Broiled)
4 similar-sized, small to medium-sized zucchinis, ends trimmed and halved lengthwise
salt and freshly ground pepper
1/2 to 1 c. sharp, grated cheese
Instructions
Cover a large baking sheet with foil and lay the prepped zucchinis , cut side up, down the middle so that all will be broiled evenly. Sprinkle the zucchinis with a bit of salt, then allow them to sit for a few minutes – moisture will be drawn out and the cheese will stick a bit better.
Heat the broiler when you’re ready to go, sprinkle on as much cheese as you’d like and then give all a good grinding of pepper. Broil for 5 to 8 minutes, depending on the thickness of the zucchinis, watching them carefully. The zucchini is perfect when the cheese is brown and bubbling and each half is tender enough to pierce with a fork.
