Roasted Pumpkin Seeds

  • Author: Meagan

Description

Waverly’s job!  And after several trials, we can’t really discern a saltiness difference between rinsed seeds (after soaking them overnight), or not.  These are always worth the effort! – enjoy!

Ingredients

fresh pumpkin seeds, rinsed, sorted and drained

~ 4 c. cool water AND 1 T. kosher salt

Instructions

Stir the salt into the water in a medium-sized bowl and add the cleaned seeds – the longer you soak, the saltier the snack, so leaving them overnight is best.

Layer the drained seeds on a cookie sheet and bake for about 40 minutes at 300 – make sure to stir them every 10 minutes or so.  They’re done when you can just see some of the edges starting to brown.  A perfect fall snack!
