Cranberry Oatmeal Snack Cookies

Directly from the back of a package of Ocean Spray Craisins…enjoy!



2/3 c. EACH butter AND packed brown sugar

2 eggs

1 1/2 c. EACH flour AND large flake oats

1 t. baking soda AND 1/2 t. salt

1 1/2 c. Craisins

2/3 c. white chocolate chips (or regular chocolate chips) – I often do a combo


Preheat the oven to 375, line a couple of baking sheets with parchment and using your electric mixer, beat the butter and sugar for a couple of minutes until the mix is light and fluffy.  Add the eggs and beat again.  In a separate bowl, whisk together the 4 dry ingredients and with the mixer on low, slowly add the dry mix to the wet and finish by stirring in the Craisins and chocolate chips.

Drop by tablespoons onto your prepared baking sheets and then give each cookie a bit of a press – I found they didn’t spread much.  Bake for 10 minutes, until they’re a light golden brown, then transfer them to  a rack to cool completely.
