Green Goddess Salad Dressing

I’ve seen a version of this in dozens of places, but I think I blended a recipe from Lynn Crawford’s book, ‘At Home with Lynn Crawford’, bon appetit, and Ina Garten’s presentation – in this case, Bibb lettuce and tomatoes only.  This makes a good 2 cups, and I prefer it very chilled so I made it a couple of hours ahead.  Another presentation that I think I’ll try next, is ‘all green’ – 2 or 3 green lettuces, green onion, cucumber, dill, parsley and avocado – enjoy!


Ingredients

Scale

1 avocado, peeled and pitted

1/3 c. mayonnaise AND 1/4 c. + buttermilk

1 T. lemon juice

1/2 c. fresh basil AND 1/4 c. fresh parsley

2 cloves of garlic

2 anchovy fillets (or 2 t. anchovy paste)

1 t. kosher salt AND 1/2 t. freshly ground pepper

2 green onions, chopped


Instructions

Put everything in your blender and blend until smooth – adding more buttermilk as needed for your desired consistency.  Chill for a good couple of hours and then dress your salad as you would – you could also leave it thick for a wonderful veggie dip.
