Brown Sugar Oatmeal Cookies

Ingredients
1 c. (227 g) butter, softened AND 2 c. dark brown sugar, packed
2 t. vanilla
2 eggs
1 1/2 c. (188 g) flour
1/2 t. EACH salt AND baking soda
3 c. large flake oatmeal
1/2 c. pecans, finely chopped
Instructions
Preheat the oven to 350 and line a couple of baking sheets with parchment. Using your electric mixer, cream together the butter and sugar for a few minutes until the mixture is fluffy, then beat in the vanilla, then add in the eggs, one at a time, beating in between additions and scraping down the bowl as needed.
In a separate bowl, whisk together the flour, salt and baking soda and then add the flour mix to the creamed mixture in thirds, mixing in between additions, then add in all of the oatmeal, mixing until just combined, and then the pecans. Drop the dough in tablespoon sized balls onto your prepared baking sheets, a couple of inches apart, and then bake for 10-12 minutes until they are as crisp as you’d like. Allow them to cool on the pan for a bit before removing them to a rack to cool completely.
