Cucumber Salad ‘Too’

I had to name it something that I would find again… and it is different from this Cucumber Salad.  This is something that Mom has always made, and it’s a regular addition to many summer meals…so I wanted to get it down – enjoy!


Ingredients

Scale

Cucumber Salad ‘Too’

1 English cucumber, or 46 mini cucumbers, washed and cut into pretty bite-sized pieces

1 c. cherry or grape tomatoes – halved if you wish (optional)

Dressing

1/4 c. seasoned rice vinegar

1/2 t. sugar

2 T. chopped fresh herbs – we like parsley or mint, but dill is also very tasty


Instructions

Put the cucumber in a bowl, add in the tomatoes if you’re using them and sprinkle on the fresh herbs.  Shake together the vinegar and sugar in a small container and drizzle over top.  Done.
