Deanna’s Ultimate Bran Muffins

Description

Mom’s recipe…she’s been making them forever and they always work.  Feel free to swap in your choice of fruit/nuts, I used 1 cup of raisins for this batch – enjoy!


Ingredients

Deanna’s Ultimate Bran Muffins

1 1/2 c. wheat bran

3/4 c. flour

1 t. baking soda

1/2 t. salt

1/4 t. baking powder

1 egg

3/4 c. brown sugar

1/4 c. canola oil

1 c. buttermilk

2 T. molasses

1/2 c. EACH raisins AND chopped dried apricots

1/4 c. raw, shelled sunflower seeds


Instructions

Preheat the oven to 375 and line a 12-cup muffin tin with papers or grease each cup as you would.

In a small bowl, whisk together the bran, flour, baking soda, salt, and baking powder and set aside.  In your electric mixer, beat together the egg, brown sugar, oil, buttermilk and molasses for a minute or so until well combined.  Turn the mixer to a low speed and slowly add the dry mix to the wet, mixing until there is no trace of flour, then stir in the fruit and nuts that you’re using by hand.

Bake for 15- 20 minutes until the middles bounce back to a light touch, allow the muffins to cool in the pan for a few minutes then turn them out onto a rack to cool completely.
