Chocolate Hazelnut Cake
Description
Nutella cake! We really only eat almonds and pecans in our house due to allergies, but I was making dessert for an adults only evening and this was a must (I first tried it in my pre-posting days). This is borrowed from Nigella Lawson’s, ‘How to be a Domestic Goddess’ – enjoy!
Ingredients
Chocolate Hazelnut Cake
6 eggs, separated
1/8 t. salt
1/2 c. butter, softened
14 oz. Nutella (I weighed it)
1 T. Frangelico liqueur
1/2 c. ground hazelnuts
4 oz. bittersweet (or semi-sweet) baking chocolate, melted
Preheat the oven to 350 and grease a 9 or 10-inch spring form pan, line it with parchment and grease the parchment.
In a large bowl, whisk the egg whites and salt until they’re stiff, but not dry – I used my hand-held mixer. In a separate large bowl – I used my electric mixer – beat together the butter and Nutella until smooth, then add in the Frangelico, egg yolks and ground hazelnuts and mix well. Fold in the cooled, melted chocolate, then stir in a scoop of egg whites. Finish off the batter by folding in the rest of the egg whites and then scrape it all into your prepared pan and bake for about 35 minutes until the cake starts to pull away from the sides of the pan and the center is set. Set the cake on a rack to cool.
Icing
1/2 c. whipping cream, hot (I microwaved it on low)
4 oz. bittersweet (or semi-sweet) baking chocolate, melted
1 T. Frangelico
~1 c. whole hazelnuts, lightly toasted and cooled for garnish
Instructions
Whisk together the 3 icing ingredients until smooth. Unmold the cake, you don’t need to remove the bottom if you’re nervous about wrecking it, but I was able to flip it over onto my hand, quickly peel off the paper and set it on it’s serving plate – you decide. Smooth the icing over the top of the cake and drop on the toasted hazelnuts. Nigella suggests serving this with shots of Frangelico.

Question about the eggs; you said 6 eggs, separated, do you use the yolks anywhere, or just the whites?
