Turnip Applesauce Casserole

Description

This recipe is a Thanksgiving tradition from one of Mom’s old cookbook series called ‘Tried ‘n’ True’.  That being said, we have several turnip casserole recipes that we love as a family, but this is the one that I made for my in-laws big dinner.  And it was good.


Ingredients

Scale

Turnip Applesauce Casserole

1 medium turnip, cooked and mashed

1/2 c. applesauce AND 2 beaten eggs

2 T. soft butter

3 T. flour AND 1 T. brown sugar

1 t. baking powder AND 1/2 t. salt

a good grinding of fresh pepper


Instructions

In a large bowl, beat everything together with an electric hand mixer.  Scrape into a greased casserole dish and refrigerate for up to a day if you wish before cooking it.  Whenever you choose to cook it, make sure it’s at room temperature to start and bake at 350 for about 45 minutes.
