Creamy Popsicles

Description

A great treat to have around at any time of year, I found this in Everyday Food.  I made these according to the recipe with orange juice concentrate which makes for perfect replicas of orangesicles, but I think that lemonade also makes some pretty awesome treats – enjoy!


Ingredients

Scale

1 tin (295 mL) thawed orange juice concentrate (or any other citrus juice)

1/31/2 c. sugar

2 c. full-fat plain yogurt (3% worked just fine for me)

2 t. vanilla


Instructions

In a small pot, whisk together the juice concentrate and sugar over low heat for a few minutes until the sugar is completely dissolved.  Turn off the heat, and whisk in the yogurt and vanilla until you have a smooth mixture.  Carefully fill your ice-pop molds – this will make 12 depending on what size you have – and freeze until solid…overnight is best.
