Farmland Flax Cookies

Description

Direct from Canadian Living’s, ‘The Complete Canadian Living Baking Book’, these are lovely and even though they’re ‘healthier’ than regular cookies, the girls still go wild over them.


Ingredients

Scale

1 c. butter, softened

1 c. packed brown sugar AND 2/3 c. sugar

2 eggs AND 1 t. vanilla

1 c. EACH flour AND whole wheat (or spelt) flour

1 1/2 c. oatmeal AND 1 1/3 c. flax seeds

2 t. baking soda


Instructions

Preheat the oven to 350 and line a couple of baking sheets with parchment paper.  In a large bowl (or your electric mixer), beat together the butter and sugars for a few minutes until the mixture is fluffy and lighter in color, then beat in the eggs and vanilla.  Whisk together the 5 remaining dry ingredients and then add them to the mix, stirring until well combined – the dough will be soft.

Drop in rounded tablespoonfuls (or use a cookie scoop) onto your baking sheets and bake for 10-12 minutes, making sure to check them – the edges will brown up quickly! – enjoy!
