Farmland Flax Cookies

Description

Direct from Canadian Living’s, ‘The Complete Canadian Living Baking Book’, these are lovely and even though they’re ‘healthier’ than regular cookies, they make for a perfect afternoon coffee break.


Ingredients

Scale

1 c. (227 g) butter, softened

1 c. (200 g) packed brown sugar AND 2/3 c. (133 g) sugar

2 eggs AND 1 t. vanilla

1 c. EACH flour AND whole wheat (or spelt) flour – for a total of 250 g

1 1/2 c. (128 g) oatmeal AND 1 1/3 c. (160 g) flax seeds

2 t. baking soda


Instructions

In a large bowl (or your electric mixer), beat together the butter and sugars for a few minutes until the mixture is fluffy and lighter in color, then beat in the eggs and vanilla.  Whisk together the 5 remaining dry ingredients and then add them to the mix, stirring until well combined – the dough will be soft.

Form into rounded tablespoonfuls (or use a cookie scoop) to make balls, then place on a tray and chill for at least 30 minutes (cover if you’re going to leave them overnight).

When you’re ready to get baking, preheat the oven to 350 and line a couple of baking sheets with parchment paper.  Place the cold dough balls about 2 inches apart on your baking sheets and bake for 10-12 minutes, making sure to check them – the edges will brown up quickly! – enjoy!
