Smoked Salmon Spread
Description
Feel free to put this on everything – though it’s tastiest on a bit of baguette, good pumpernickel or a hearty cracker (I also love it straight up on cucumber slices). Borrowed pretty much exactly from Ina Garten’s, ‘Barefoot Contessa, Family Style’, it’s an easy, make-ahead appetizer that everyone will want the recipe for. Enjoy!
Ingredients
1 package (250 g/8 oz) cream cheese, softened
1/2 c. sour cream – I’ve used a whole cup if I’m using extra salmon
2 t. lemon juice
~1/4 c. fresh minced dill
1 t. + prepared horseradish (I use ‘hot’)
1/2 t. kosher salt and a good grinding of freshly ground pepper – +more to taste
~230 g/8 oz + smoked salmon, minced (this is double the suggested amount as I usually make this with Brock’s Smoked Salmon – but I’ve also used lox and we love it either way!)
Instructions
Using your electric mixer, beat the cream cheese until it’s smooth, then add in the sour cream, lemon juice, dill, horseradish, salt and pepper and give it a good mix. Stir in the smoked salmon, scrape it all into a serving dish, cover tightly and chill for at least a couple of hours before serving.
