Very different from Coleslaw (Clear) – I researched a creamy one because it’s a very necessary topping for Brock’s awesome 16-hour smoked pulled pork sandwiches. I figured after all of Brock’s effort, it was the least I could do. I looked at several recipes but have to say that what I settled on is pretty much Bobby Flay’s version and it more than did the job – enjoy!
1 small head of cabbage, finely shredded and a couple of grated carrots OR
2 bags (14 oz/397 g) coleslaw
1/4 of an onion, thinly sliced or grated (optional)
1/2 c. EACH mayonnaise AND sour cream
2 T. EACH sugar AND vinegar
2 t. EACH dry mustard AND celery salt
1/2 t. EACH salt AND freshly ground pepper
Whisk together all of the dressing ingredients and taste for seasonings, then toss and combine well with your cabbage (coleslaw). We found it was a perfect proportion of dressing to cabbage.
