Overnight Muesli

I borrowed this from ‘The New Whole Grains Cookbook’, by Robin Asbell, and we all thought it was brilliant so it will regularly be stowed in the fridge!  If you like it sweeter, add a tablespoon or 2 of maple syrup to the mix (as in the original recipe), but we thought the dates did the job and my version is below – enjoy!


Ingredients

Scale

1/2 c. slivered almonds – toasted are best, but I don’t always make the time

2 medium apples, cored and grated with the skins on

1 1/2 c. large flake rolled oats

1/4 c. soy protein powder (optional – we usually have a boiled egg with ours)

1/2 c. pitted Medjool dates, chopped – I used 6

2 c. unsweetened almond milk

more nuts, coconut, chopped banana or other fruit for serving if you wish


Instructions

Mix everything together in a large bowl (that will fit in your refrigerator), cover the bowl tightly and refrigerate for at least 8 hours – overnight is obviously the easiest.  Give it a good stir and microwave an individual serving for a minute or 2 – though apparently this can also be served cold.  Such a great breakfast to have ready!
