Tomato Goodness

Everyone has their own variation I’m sure, but I figured it was a good name since Brock and I crave it now.  The measurements are definitely ‘loose’, I free-pour everything and while this started out as a marvelous topping to our weekend poached eggs on toast, it graduated to fancy appetizer for our Moms – enjoy!


Ingredients

Scale

Tomato Goodness

olive oil

56 cloves of garlic, minced AND 1/2 t. + salt AND 1 T. chopped fresh rosemary

1 lb. ripe grape or cherry tomatoes, halved (23 cups)

2 T. balsamic vinegar reduction

sliced baguette, poached eggs on toast or crackers and goat cheese or…


Instructions

Heat a bit of oil in your favorite skillet and add the garlic, salt and rosemary.  Cook and stir until the garlic just starts to brown, then add in all of the tomatoes and a good squeeze of balsamic reduction.  Cook until the tomatoes have released most of their liquid, but try not to break them up.  Reduce your goodness until it’s as ‘saucy’ as you’d like – taste and adjust for seasonings.  Serve as you wish!
