Apple Cheddar Loaf
1 3/4 c. flour
2 1/2 t. baking powder
1/2 t. salt
3/4 c. + 2 T. milk
1/3 c. canola oil
2 T. brown sugar
1 c. peeled and finely diced apple
1 c. grated old cheddar + more for the top if you’d like
Preheat the oven to 400 and grease an 8 x 4 loaf pan. In a small bowl, whisk together the flour, baking powder and salt, and in a large bowl, whisk together the milk, oil, egg, and brown sugar.
Add the apple to the ‘wet’ bowl and give it a good stir, then add in the flour mixture and stir, and then finally add in the cheese – breaking it up as it’s added so it mixes well. Scrape the batter into your prepared loaf pan and bake for a total of 40 to 45 minutes until it’s a lovely golden brown and a toothpick comes out clean – if you’d like extra cheese on top, add it for the last 10 minutes or so of the total baking time. Allow the loaf to cool in the pan for about 10 minutes before turning it out onto a rack to cool completely – though we didn’t wait for this, we enjoyed it warm.
