Oatmeal Raisin Cookies

Another Deanna tested recipe that I believe originated with the Atco Blue Flame Kitchen – enjoy!


Ingredients

Oatmeal Raisin Cookies

1 c. butter, room temperature

1 c. dark brown sugar, packed

1/2 c. sugar

2 T. molasses

2 eggs

1 c. flour AND 1/2 c. whole wheat flour

1 t. EACH baking soda AND cinnamon

1/2 t. EACH nutmeg AND salt

3 c. large flake oats (not quick cooking)

1 1/2 c. raisins


Instructions

Preheat the oven to 350 and in your electric mixer beat together the butter, both sugars and molasses until fluffy.  Add in the eggs one at a time, beating well after each addition.

In a separate bowl combine the next 6 dry ingredients – both flours, baking soda, cinnamon, nutmeg and salt – and then add this into the mix and beat until it’s all well combined.

Stir in the oats and raisins and drop in tablespoon-sized spoonfuls onto parchment lined baking sheets.  Bake for about 15 minutes (or less if your cookies are smaller) and then allow them to sit on the baking sheet for a few minutes before transferring them to a rack to cool completely.
