Whipped Shortbread

Directly from the Best of Bridge (with a bit more flour)…any guesses as to how much I like my shortbread?


Ingredients

Scale

Whipped Shortbread

1 c. butter, room temperature

1/2 c. icing sugar

1 3/4 c. flour

decorate with holiday cherries, nuts or chocolate bits


Instructions

You really need an electric mixer for this…cream together the butter and sugar, then add in all of the flour and carefully mix it up.  When you’re at a point where flour won’t go flying, scrape down the bowl, turn up the speed to medium-high and beat for a good 10 minutes.  Your dough will lighten several shades and become perfectly fluffy.

Drop in small spoonfuls (difficult to shape, but possible) onto a parchment lined baking sheet, decorate as desired (if desired) and bake at 350 for about 10 minutes – the edges may just begin to brown.  Allow them to cool for several minutes before removing them to a rack to cool completely.  Enjoy!
