Puffed Wheat Cake and Rice Krispie Squares

I couldn’t help myself…perhaps it’s the whole ‘back to school’ mindset, or perhaps I couldn’t believe that I hadn’t posted these yet!  Both recipes are from Mom’s notes, though I’m sure they’re found everywhere on the internet.  The secret to both is cooking spray – open up your dishwasher, lay your tools out on the open lid – your large bowl, your pan, your silicone spatula  – and spray them all.  Spray the measuring cup before you measure out the corn syrup, spray your hand before you press the deliciousness into the pan.  I bet you didn’t know it was that easy, and both are easily doubled.  Enjoy!


Ingredients

Scale

Puffed Wheat Cake

5 c. puffed wheat

1/4 c. (57 g) butter

1/2 c. EACH sugar (100 g) AND corn syrup (170 g)

2 T. brown sugar

4 T. (25 g) cocoa

1/2 t. vanilla

As I mentioned, spray everything with cooking spray including an 8 x 8 cake pan.  Pour the puffed wheat into your prepared large bowl and set aside.

In a medium sized saucepan, combine the butter, sugar, corn syrup, brown sugar and cocoa and bring it all to a rolling boil while stirring constantly.  Remove the pot from the heat and add the vanilla – it will splatter a bit – and give it another good stir.

Pour the chocolate mixture over the puffed wheat and stir until the puffed wheat is evenly coated, then press it all evenly into your prepared pan.

Rice Krispie Squares

5 to 6 c. rice krispies (I use 5, I like it chewy)

1/4 c. butter

1, 250 g package of marshmallows (about 40)

1/2 t. vanilla (if you remember)


Instructions

Spray everything with cooking spray including an 8 x 8 cake pan then pour the rice krispies into your prepared large bowl and set aside.

In a medium sized saucepan, combine the butter and marshmallows and stir the mixture continuously on medium heat until the marshmallows have just melted.  Remove the pot from the heat, add the vanilla and give it another good stir.

Pour the marshmallow mixture over the rice krispies, stir until it’s well combined, then press it all evenly into your prepared pan.
