Basil Vinaigrette (on fresh tomatoes)

Description

Another recipe from Mom – I actually had to ask her for this so that I could make it for her as part of her birthday dinner.  This is best enjoyed on fresh tomatoes, I doubled it this time  – enjoy!


Ingredients

Scale

Basil Vinaigrette

3 T. olive oil

1 T. white wine vinegar (I used white balsamic vinegar this time)

1 t. Dijon

1/2 c. lightly packed fresh basil leaves (the market actually had lemon basil, so that’s what I used here)

salt and freshly ground pepper to taste

6 large tomatoes, washed sliced and arranged on a pretty serving dish

extra basil leaves for decoration


Instructions

In a blender or a mini food processor, combine the oil, vinegar, Dijon, and basil and blend until smooth.  Season to taste with salt and pepper and then store in the fridge in a well sealed container if you’re not using it straight away.  Otherwise, drizzle the dressing over the tomatoes and decorate the plate with a few extra basil leaves if you wish.
