Chewy Chocolate Chip Bars
Description
I found this on Dinner with Julie and I know it’s basically just a chocolate chip cookie in a pan, but it’s fast, and one of those recipes that’s still quick when made by hand. This is also a super easy recipe to play around with – the photos here show a version with cut up caramels and pecans added in – enjoy!
Ingredients
1/4 c. soft butter AND 3/4 c. brown sugar, packed
1 egg AND 1 t. vanilla
1/2 c. EACH flour AND spelt flour (or whole wheat) – or just use regular flour, all work!
1/2 t. baking powder AND 1/4 t. salt
1/2 c. chocolate chips (+ anything else that comes to mind!)
Instructions
Preheat the oven to 350 and butter an 8 x 8 cake pan (I also usually line the pan with parchment). In a medium bowl, use a stiff spatula to combine the butter and brown sugar, then add in the vanilla and egg and stir until the mixture is smooth.
Add the flour(s), baking powder and salt and mix well, then fold in the chocolate chips. Spread/press the batter as evenly as you can into your prepared pan and bake for 15 to 20 minutes – the edges should be just starting brown and your squares should still be chewy when they cool.
