Banana Oatmeal (Chocolate Chip) Mini’s

Another wonderful recipe courtesy of Kyla!  You can make regular sized muffins as well, but the girls LOVE them this way, and they’re a handy snack-to-go – enjoy!


Ingredients

Scale

Dry

1 c. spelt (or whole wheat) flour AND 3/4 c. oatmeal

1/4 c. brown sugar AND 3 t. baking powder

1/2 t. EACH cinnamon AND salt

1/4 t. nutmeg

1/2 c. chocolate chips (optional) – mini chips are easier to mix in, but regular size look good on top!

Wet

1 egg, slightly beaten AND 1/4 c. canola oil

1/2 c. milk

2 mashed bananas


Instructions

Preheat the oven to 375 and spray either a 24 cup mini muffin tin or a 12 cup regular sized muffin tin.  Combine all of the dry ingredients in a large bowl, and in a separate bowl, whisk together the wet ingredients.

Add the wet ingredients to the dry and stir until just combined, then divide the batter evenly among the muffin cups that you’re using.  Bake the mini muffins for 12 to 14 minutes and the regular sized muffins for 15 to 18 minutes until the edges are nicely browned and the centers bounce back to a light touch.  Allow them to rest in the pan for a few minutes before turning them out onto a rack to cool completely – though we highly recommend enjoying them warm!
