Tuscan Baked Chicken and Beans

Description

This was a ‘reader recipe’ from Cooking Light and it may turn out to be a new favorite.  Since Brock and I were out on Saturday night and I wanted to cook but needed a fast post soccer meal on Sunday,  I liberally used the food processor and served this over orzo.  I also sauteed some carrots with a bit of garlic, onion and brown sugar and maybe we were all just really hungry, but it was a really tasty meal.  Brock’s away for a bit now so last night the girls and I had some Chicken and Rice Soup from the freezer and tonight will most likely be an egg sandwich and a bunch of vegetables.

Tuscan Baked Chicken and Beans

6 to 8 chicken thighs – skin on and bone in

3 to 6 slices of bacon, cooked and crumbled

1 onion, finely chopped

2 to 3 c. fresh spinach, chopped (or 1, 300 g package of frozen spinach, thawed and squeezed well of water)

1 sprig of fresh rosemary, leaves removed and finely chopped

1 can (19 oz/540 mL) white kidney beans or other white beans, rinsed and drained

1 can (14 oz/398 mL) diced tomatoes


Instructions

Preheat the oven to 350 and heat up a bit of oil in a large, ovenproof skillet – if it’s not ovenproof then spray a good sized casserole dish and have it ready.

Add the chicken to the skillet on medium-high heat and cook for about 4 minutes per side, sprinkling each side with salt and freshly ground pepper.  The chicken should be well-browned, but not quite cooked through.  Remove the chicken and set it aside on a plate and use a paper towel to draw out some of the oil if there seems to be a lot.

Add the onion to the hot skillet and saute for a few minutes until it starts to soften, then add in the bacon, spinach, rosemary, beans and tomatoes.  Give it all a good stir until heated thru then layer this mixture onto the bottom of your prepared casserole dish and top with the chicken, skin side up.

Bake uncovered for 30 to 40 minutes until everything in the dish is bubbling.  As I mentioned, we loved this over orzo but it would be great with some crusty fresh bread as well.  Enjoy!
