This is a blend of a couple of recipes and I forgot how good this salad was! My sister-in-law told me that they’ve enjoyed a version with the addition of chickpeas and I think I’ll have to try that next time.
1/2 c. plain yogurt AND 1/4 c. mayonnaise
1 T. EACH sugar AND lemon juice
1/2 t. salt
1/2 c. grated red onion, rinsed in hot water and squeezed as dry as possible
4 c. broccoli, florets cut into bite-sized pieces and stalks peeled and chopped – I always blanch it for about 30 seconds in boiling water, then drain well and allow it to dry as much as possible
1/3 c. EACH shelled sunflower seeds, raisins, crumbled feta AND crispy cooked bacon pieces
Whisk together the dressing ingredients and pour it over the broccoli in a large bowl. Stir and coat the broccoli as much as possible before adding in the rest of ingredients and mixing well. Serve chilled with just about anything.
