
Turkey-Apple-Squash Chili (Slow Cooker)
Description
This recipe is borrowed from Dinner with Julie, and I have a large crock pot – you may need to par down the recipe as required to make it fit. Also remember that this would be equally good made on the stove top!
Ingredients
Turkey-Apple-Squash Chili (Slow Cooker)
1 lb. ground turkey – cooked
1 small onion, 2 medium apples, 2 carrots, 2 celery stalks – all diced
2 –3 c. butternut squash – diced
4 cloves of garlic, finely minced
(if you prepare the above the night before, you can have dinner ‘ready’ in about 10 minutes in the morning)
2 T. chili powder AND 1 T. ground cumin AND 1 t. dried oregano
1/2 t. EACH salt AND freshly ground pepper
2 T. tomato paste (I’ve also used the whole can (5.5 oz/156 mL))
1 c. good strong chicken broth
1 can (14 oz/400 mL) coconut milk
1 can (19 oz/540 mL) black beans, rinsed and drained – I’ve also used other beans
For Serving – chopped cilantro, sour cream, avocado slices, hot sauce
Instructions
Combine everything in your crock pot and stir well. Cook on low for about 8 hours – give it a stir once or twice, if you’re around. Enjoy!
