Blueberry Oatmeal Cookies

This is adapted from a recipe I saw recently on Dinner with Julie – they were/are very good and we actually had them for dinner with a frittata – why not? The girls thought cookies for dinner was a marvelous idea.


Ingredients

Blueberry Oatmeal Cookies

1/2 c. butter AND 1 c. dark brown sugar

1 egg AND 1 t. vanilla

1 c. flour AND 2 c. large flake oatmeal

1 t. baking soda AND 1/4 t. salt

3/4 c. chopped pecans AND 1 c. fresh blueberries


Instructions

Cream together the butter and sugar and then add in the egg and vanilla.  Combine the dry ingredients in a small bowl and then add into the cookie mix and combine well.  Add in the nuts and then carefully fold in the blueberries.

Drop tablespoons of dough onto a parchment covered cookie sheet and bake for 12-14 minutes.  They should have browned edges and soft looking middles and then when they cool, they will still be chewy.
