Date and Orange Muffins

Another great muffin recipe from Mom – I just did my usual to it and included some whole wheat flour as well, though plain flour works well too!



1 whole orange AND 1/2 c. orange juice

1/2 c. chopped dates (I used 6, pitted Medjool dates)

1 egg AND 1/2 c. butter

3/4 c. EACH flour AND whole wheat flour

1 t. EACH baking soda AND baking powder

2/3 c. sugar AND 1/2 t. salt


Preheat the oven to 400 and lightly grease a 12 muffin tin.  Cut the tough ends off of the orange and discard and then cut it into sections, removing the seeds and leaving the peel on.  Put the orange along with the orange juice into your food processor and pulse until the peel is finely chopped.

Add the dates, egg and butter and pulse a couple of times until the dates are finely chopped.

Combine the 6 dry ingredients in a medium bowl and then add the orange and date mixture to it, stirring until just combined.  Divide the batter evenly among the 12 cups and bake for 15 to 20 minutes.
